シェフ候補としてキッチン業務全般の指揮運営をお任せいたします。

- スタッフの指導・教育
- 調理場の運営・管理 など
スタッフをまとめながら料理を仕上げ、キッチン全体の流れを管理する重要なポジションです。
技術だけでなく、チームワークや現場の空気づくりも大切にしています。

- 料理長:飯野シェフ
ものづくりが大好きだった少年時代。
料理人への憧れを胸に、19歳で葉山のフレンチレストランに就職。
4年半にわたり基礎から料理を学び、その後フランスへ渡航。
ノルマンディー、イル・ド・フランス、コートダジュールなど各地で5年間の研鑽を積み、本場の風を浴びる。
2011年に帰国後、青山の名店【ブノア】を経て、2013年より【arcana tokyo アルカナ東京】料理長に就任。
