2023年冬、虎ノ門ヒルズ内に開業したホテル虎ノ門ヒルズ アンバウンドコレクション by ハイアットに、ヨーロッパで長年ミシュランスターに輝くシェフ、セルジオ・ハーマンが監修するレストラン&カフェバー「ル・プリスティン東京」がオープン。オランダ出身のシェフで起業家であるハーマンは、両親が経営していたオランダの地方都市のレストランをミシュランの3つ星レストランへと昇華させ、「世界のベストレストラン50」に8年間ランクインし続ける名店へと押し上げた。そのハーマンが監修するレストランの出店は、今回アジア初となる。

「ル・プリスティン東京」は、ハーマンが展開するレストランブランド「ル・プリスティン」のベルギー・アントワープ本店に続く2号店。ホテル虎ノ門ヒルズ1階の路面店として、ホテル開業とともにオープンした同店では、オランダ・ゼーラント地方と日本の厳選された旬の食材を融合させたコンテンポラリーなヨーロッパ料理を提供する。ハーマンが2020年のオープン初年度にミシュラン1つ星を獲得したベルギー・アントワープで展開するレストラン「ル・プリスティン」の成功を受け、同レストランのDNAである5つのエレメント、「食」「ファッション」「デザイン」「アート」「音楽」が、混然一体となったガストロノミーの世界を演出する。

・ル・プリスティン東京では、以下の業務を募集をいたします。

・メインダイニングにおける調理業務全般

(食材の発注・管理、衛生管理、若手スタッフの育成 他)

Le Pristine Tokyo is a restaurant and café-bar supervised by world-renowned Michelin-starred chef Sergio Herman, who has earned international acclaim including three Michelin stars and consistent recognition on The World's 50 Best Restaurants.

Opened in winter 2023 at Hotel Toranomon Hills – The Unbound Collection by Hyatt, this marks his first restaurant venture in Asia.

Blending the culinary heritage of Zeeland in the Netherlands with Japan's finest seasonal ingredients, Le Pristine Tokyo offers a truly contemporary European dining experience inspired by the brand's five core elements: Food, Fashion, Design, Art, and Music.

Le Pristine Tokyo is currently recruiting for the following positions:

・All culinary duties in the main dining area

(including ingredient ordering and management, sanitation management, training junior staff, etc.)

Qualifications

・ホテル、レストラン等での西洋調理経験が3年以上ある方

・現在シェフ・ド・パルティエまたは同等程度の業務に従事されている方

・日常会話レベルの日本語、英語

・At least 3 years of experience in Western-style cooking at hotels, restaurants, etc.

・Currently working as a Chef de Partie or in a comparable position

・Conversational Japanese and English
