Sous Chef
French Riviera–Inspired Cuisine | 1 Hotel Tokyo


If you're reading this, we're guessing you know your way around a kitchen — and that you understand how food can transport guests, not just nourish them.


We are currently seeking a detail-driven and passionate Sous Chef to join our pre-opening culinary team, with a strong appreciation for French Riviera–style cuisine: fresh Mediterranean flavors, elegant simplicity, coastal inspiration, and beautifully sourced ingredients.


In this role, you will help lead the daily operations of a high-volume, scratch kitchen while supporting the creation of refined, seasonal menus that reflect both the spirit of the Riviera and the philosophy of 1 Hotels.


You'll work alongside a team of talented chefs, bringing creativity, leadership, and calm precision to every service — from prep and execution to mentoring line staff and solving challenges in the moment.


This is an opportunity to help shape a dining destination in Tokyo where sustainability meets sophistication, and every plate tells a story of place, freshness, and care.

You bring:
A deep passion for the culinary arts, with a minimum of 2 years of experience in a similar role
Experience or strong interest in French Riviera / Mediterranean-inspired cooking
A post-secondary diploma or culinary degree (a plus)
Advanced knowledge of kitchen operations, strong leadership, and a proven ability to engage both guests and team members
Excellent communication skills, verbal and written
Flexibility and adaptability within a 24-hour hospitality environment
A commitment to thoughtful cooking, sustainability, and elevated guest experiences
