\恵比寿 鮨謙心 とは?/
都内有名店出身の職人が立ち上げる高級鮨。大将は、高級ホテルの和食部門から始まり、高級和食店での店長・料理長を経て、渋谷有名店にて鮨を学ぶ。和食の経験を活かし、八寸や一品料理にも力を入れた、繊細でバランスのよい、有名店にも負けない鮨を握る。職人では珍しくワインソムリエのライセンスも持っており、ペアリングコースがお勧め。
