雇用形態・給与


正社員 月給35万円〜50万円

※経験・スキル・前職給与を考慮の上、決定します。

焼肉業態はもちろん、フレンチ・イタリアン・和食・中華など他業態での責任者経験も評価します。

【料理長採用】の場合は最低38万円〜を保証。

給与改定年1回(役職変更時は随時見直しあり)

黒牛は現在、体制を見直しながら再成長を目指しているフェーズです。

調理体制の中心を担う料理長候補として、成果と責任に見合った評価を行います。

試用期間・給与補足

試用期間あり(1か月〜3か月)

試用期間中は時給1,750円以上を保証(提示額相当)し、

正社員と同様の勤務時間となります。

試用期間中の月給目安:35万円〜50万円

月給には下記手当を含みます。

・業務手当:56,000円〜85,000円

・役職手当:10,000円〜40,000円

※業務手当には固定残業代を含みます

(所定外労働割増賃金・休日労働割増賃金・深夜労働割増賃金を含む)

残業時間の目安は月24時間程度です。

資格手当・スキル手当/インセンティブ制度/ボーナス・賞与あり/昇給あり/交通費全額支給

勤務時間


13時〜24時の間で10時間勤務(休憩1時間有り) 終電厳守

※ランチ営業・深夜営業はありません

終電考慮/フルタイム歓迎

月8日休み(希望シフト制/前半・後半提出)

土日休みの希望も可能です。

仕事内容・求める人物


【仕事内容】

料理長候補として、調理だけでなく厨房全体の設計をお任せします。

・肉の品質管理、仕込み設計

・調理オペレーションの構築

・スタッフへの技術指導

・原価を意識したメニュー管理

・スピードと再現性を意識した現場づくり

黒牛では今回の立て直しに合わせてカットマシンを導入(※黒牛のみ)。

手切りの技術を大切にしながら、

再現性・スピード・安定性を高める体制へ移行しています。

「作る料理長」ではなく、

厨房を仕組み化し、チームで仕事する料理長を目指せるポジションです。

入社後は、焼肉「黒牛」でスムーズにスタートできるよう、

まず姉妹店「ジンギスカン羊一」にて当社のオペレーション基準を共有する

研修期間を設けています(目安1〜2ヶ月)。

研修後は焼肉「黒牛」にて本配属となります。

黒牛で主軸として活躍いただくための準備期間です。

焼肉「黒牛」は開業18年。

百名店にも選出されてきた焼肉店です。

一方で現在は、サービスやチーム体制に課題があり、

売上は本来の力を十分に発揮できていない状況です。

赤字運営ではありませんが、私たちはこの状態に満足しておらず、

より良い店づくりを目指して体制の見直しを進めています。

完璧な状態ではありませんが、

立地や席数、設備面にもまだ改善の余地がありつつ、

致命的な制約はなく、

料理・サービス・チーム力を整えることで

再び成長できると考えています。

そのため今回、体制強化として

店長候補・料理長候補を募集します。

今回の立て直しにあたり、黒牛では

カットマシンを新たに導入(※黒牛のみ)。

手切りの技術を大切にしながら、

再現性・スピード・安定性も高めていく方針です。

また今後は

クラフトビール/ナチュラルワイン/デザートなど、

焼肉+αの新しい取り組みも予定しています。

入社後はまず姉妹店「ジンギスカン羊一」にて

当社のオペレーションやサービス基準を学んでいただき、

その後、焼肉「黒牛」へ配属となります。
