. 私たちのビジョン

葉山の小高い丘に位置する「Solis Agriturismo」。 私たちのコンセプトは、イタリア語の「Solis(太陽)」が示す通り、太陽の恵みを浴びた三浦半島の食材を、その土地の空気感とともに提供することです。

単なるレストランではありません。畑を耕し、生産者と語らい、その日の「一番の輝き」を皿の上に表現する。食の原点に立ち返り、お客様に感動を届けるアグリツーリズモ(農泊・食体験)のリーダーを募集します。

仕事内容

料理長として、キッチン全体のマネジメントだけでなく、メニュー開発やコンセプトメイキングをお任せします。

  • メニュー開発: 決まったレシピはありません。三浦野菜や相模湾の鮮魚など、その日の仕入れに基づいたクリエイティブなコースの構成。
  • 調理・運営: 妥協のない調理と、スムーズなキッチン運営。
  • 生産者との連携: 地元農家や漁師とのネットワーク構築、食材の目利き。
  • チーム育成: スタッフの技術指導およびモチベーション管理。
  • コスト管理: 原価計算、在庫管理などの数値マネジメント。

調理経験5年以上

  • 「素材」を愛する方: 食材の個性を活かすことに情熱を注げる方。
  • クリエイティビティ: 既存の枠にとらわれず、新しい食体験を提案できる方。
  • コミュニケーション能力: チーム、そしてお客様や生産者と誠実に向き合える方。
  • 経験: イタリアンまたはフレンチの実務経験(シェフ・スーシェフ経験者優遇)

・経験もさることながら人格重視

・ホスピタリティーの気持ちにあふれる人 ・経営に興味が有る方
