業務内容


【 業務内容 】

最高の顧客体験を創出するため、VIPルームやラウンジで提供する料理全般を担当する業務当

・ホスピタリティエリアにおける調理業務およびキッチン部門をエグゼクティブヘッドシェフと協力して運営していただきます。

・VIPルームへのコース料理から大規模なビュッフェ、ラウンジでのアラカルトまで、

多彩なシーンに合わせたメニュー開発とクオリティ管理を担当していただきます。

【具体的な業務】

メニュー開発・商品企画

・各エリア(VIP、ラウンジ、一般)のコンセプトに合わせた料理開発。

・日本の四季や最新のトレンドなども取り入れたプレゼンテーションの考案。

調理業務・クオリティ管理

・仕込みから仕上げまでの調理指揮。

・味、温度、盛り付けの美しさ、提供スピードの管理。

キッチンマネジメント

・約30名規模のキッチンチーム(社員・アルバイト)の育成、配置、シフト管理。

衛生・原価管理

・HACCPに準拠した衛生管理の徹底。

・食材発注、在庫管理、フードロス削減への取り組み。

【 興行がない期間の業務 】

国立競技場以外での大規模ケータリング運営や、グループ企業での新規店舗立ち上げ(事業計画立案、オペレーション構築サポートなど)

にも携わっていただくこともあります。

2026年4月、国立競技場が新しく生まれ変わります。

その象徴のひとつとして拡張されるホスピタリティエリアでは、特別なお客様に向けた食とおもてなしの体験を提供します。

私たちは、この空間での料理・ドリンク・サービスを一手に担うことになりました。

格式あるVIPルームから開放的なラウンジ、臨場感あふれるピッチサイドシートまで、

それぞれ異なる目的とシーンに合わせたホスピタリティが求められます。

この空間を支えるのは、フルコースからビュッフェなど様々なスタイルの料理、

グランヴァンからナチュラルワイン、クラフトカクテルといった飲料、そして上質なレストラン相当のサービス。

スタジアムでの熱狂とおもてなしが両立する体験を一体で体現できるチームです。

ここでの仕事は、単なる飲食提供にとどまりません。「食を通じて感動を設計する」という新たな挑戦です。

求める人物像

必須

・調理師免許をお持ちの方

・ホテル、レストラン、婚礼施設等での調理経験(目安6年以上)

・メニュー開発および原価計算の経験

・ホテルやレストランでの料理長(シェフ)、副料理長(スーシェフ)経験

・大量調理(バンケット)と繊細なコース料理の両方の経験

・スタッフ育成など、チームビルディングに携わった経験

※イベント開催スケジュールにより早朝・深夜勤務の可能性あり。

※開業準備期間中は主に昼間勤務。開業後はナイター対応等も含めシフト調整。
