職務概要

シェフドパルティ(パティスリー)は、パティスリーおよびベーカリーチームの一員として、高品質なデザートやベーカリーアイテムの製作を担当します。ペストリーシェフおよびヘッドベイカーをサポートしながら、ブランド基準に沿った商品提供、食品安全・衛生管理の維持、そして前向きで生産的なキッチン環境づくりに貢献していただきます。

主な業務内容
  • パティスリーおよびベーカリーチームの一員として、デザート・ペストリー・ベーカリー商品の製作をサポート
  • ペストリーシェフおよびヘッドベイカーのもと、各種デザートやペストリーの仕込み・製作を担当
  • 季節ごとのデザートメニューや新しいペストリーアイデアの提案
  • パティスリーキッチン内における食品安全・衛生基準の遵守
  • 作業ステーシンを整え、必要な食材・機材が常に準備された状態を維持
  • キッチンチームと連携し、前向きで効率的な職場環境を構築
  • ジュニアスタッフへの指導・育成を行い、スキルとパフォーマンス向上を支援
  • 在庫管理を行い、品質を維持しながら食品ロスを最小限に抑制
  • キッチン内の清潔さと衛生状態を常に維持
  • HACCPを含む食品安全基準を遵守し、安全な食品提供を徹底
応募資格・経験
  • ホテル、レストラン、またはベーカリーでのパティスリー経験
  • 製菓・製パンに関する基本的な知識と技術
  • 食品衛生およびHACCPに関する理解
  • 忙しい環境でも柔軟に対応できる方
  • チームワークを大切にし、円滑なコミュニケーションができる方
  • パティスリーへの情熱と向上心をお持ちの方

Job Summary

The Chef de Partie – Pastry supports the Pastry and Bakery team in preparing high-quality desserts and bakery items in line with brand standards. Working closely with the Pastry Chef and Head Baker, this role contributes to menu development, ensures food safety and hygiene compliance, and helps create a positive and productive kitchen environment.

Key Responsibilities
  • Support the Pastry and Bakery team in preparing high-quality desserts, pastries, and bakery items
  • Assist the Pastry Chef and Head Baker in the production of a wide range of desserts and pastry products
  • Contribute creative ideas for seasonal dessert menus and new pastry concepts
  • Maintain food safety, hygiene, and cleanliness standards within the pastry kitchen
  • Prepare and organize workstations, ensuring ingredients and equipment are ready for service
  • Collaborate with the kitchen team to foster a positive, efficient, and professional work environment
  • Guide and mentor junior team members to support skill development and performance improvement
  • Manage inventory levels, minimizing waste while maintaining product quality
  • Ensure cleanliness and sanitation standards are upheld at all times
  • Comply with HACCP and all food safety regulations to ensure safe food preparation
Qualifications & Experience
  • Experience in pastry production within a hotel, restaurant, or bakery environment
  • Solid knowledge of pastry and bakery techniques
  • Understanding of food safety and hygiene standards, including HACCP
  • Ability to work effectively in a fast-paced kitchen
  • Strong teamwork and communication skills
  • Passion for pastry and continuous improvement
