■和牛割烹の調理業務全般

黒毛和牛を一頭買いする日山だからこそ得られる、カット・火入れ・割下の扱い・懐石料理の流れなど、専門性の高い技術に触れられるポジションです。

経験に応じて、難しい業務も段階的に担当していただきます。

【主な業務内容】

◎仕込み

・黒毛和牛の下処理

・季節野菜のカット・下ごしらえ

・割下や出汁、合わせ調味料の仕込み

・会席料理に合わせたベースの仕込み

→日山の味の要となる仕込み。

肉の状態や季節野菜の鮮度、調味料の合わせ方など、先輩が丁寧に指導します。

◎すき焼き・しゃぶしゃぶ等の調理

・鍋料理の火入れ、盛り付け

・会席料理の調理(煮物、焼物、椀物、揚げ物など)

・美しく見せるための盛り付け技術を習得

→すき焼き・しゃぶしゃぶは仲居さんがお客様の前で最後の火入れをします

最高の火入れの状態でお客様に食べていただきます。

◎メニュー開発・季節料理の提案(希望に応じて)

・季節の食材を用いた新メニューの考案

・すき焼き、しゃぶしゃぶに合う一品料理の開発

・特別会席や行事料理の提案

→若手でもアイデアを歓迎する文化。料理長候補としての視点が磨かれます。

◎キッチン運営

・食材管理、棚卸し

・衛生管理、厨房内の掃除

・段取り、オペレーション改善

→成長に合わせて"料理長補佐"としての視野が広がります。

◎後輩指導・チーム連携

・若手料理人への技術指導

・仲居さんやホールスタッフとの連携(料理提供のタイミング調整)

→チーム一丸となってお客様に満足いただける料理・サービスを提供します。

求める人材:

【必須条件】

調理経験(和食・洋食・中華経験問わず)1年以上。アルバイトのみでの経験もOK
