全粒粉ブリトーから、パンに合わせる惣菜、さらには店舗で提供する本格メニューまで。ここではジャンルを超えた多彩な調理を経験できます。仕込みから新メニューの企画まで一貫して携われるため、料理人としての「引き出し」を圧倒的に増やせる環境です。

【仕事内容】

祐天寺の自社工房にて、国産素材を活かした料理の調理や、新メニューの開発を担当していただきます。

~具体的には~

  • ブリトーや総菜パンの製造
  • 店舗向けメニューの調理
  • 旬の素材を使った新作開発
  • 仕入れ・在庫の管理業務

集中して調理・開発に取り組めるセントラルキッチン形式の工房です。

まずは工房の流れに慣れて頂き、工房の流れに慣れ次第管理業務や新メニューの試作にも関わっていただきます。自分のアイデアが形になり、商品として世に出る喜びを実感してください。

以前は料理人として自分自身でお店を運営していました。

素材にこだわるというより業態にこだわっていた事で競合と差別化が図れず、

さらにコロナ禍により閉店しました。

ここでは料理ジャンルというよりは素材重視で、

コールドサンドやブリトー、バーフードまで、ゼロから仕込み、自社工房で手づくりしています。

国産素材や小麦粉にもこだわり、調理技術だけでなく、

羽田空港という公共インフラで提供する責任のもと、衛生管理や栄養面まで徹底して学べる環境です。

本人次第ですが、毎日が勉強で料理人としての土台をしっかり築けていると感じています。

素材を組み合わせて新しい味を生み出す

代表はバーテンダー。市販のリキュールを使うのが主流だった時代に、新鮮な果実やハーブを自在に組み合わせる「ミクソロジー」に出会い、その可能性に魅了されました。お酒を通じても「体に良くて本当に美味しいもの」を届けたい。そんな想いから、2005年に私たちの会社は始まりました。

基本給:月給 21万3000円 〜 37万円

固定残業代:なし
