どのような仕事をするのですか?
セクションシェフとして、ゲストと会員に素晴らしい体験を提供するため、厨房のあらゆる面を管理する責任があります。また、料理長は、オペレーション、品質、管理機能のすべてが適切に遂行されていることを確認する必要があります。具体的には、以下の業務を最高水準で遂行する責任があります:
- オペレーション、品質、管理機能など、キッチンのあらゆる側面を管理する。
定期的に顧客からのフィードバックを積極的に求め、すべてのゲストからの問い合わせにタイムリーかつ効率的に対応する。
ビジネスニーズに応じて適切なリソースを確保する。
飲食店舗への食材の提供を管理し、必要に応じて現行の法令を遵守するための措置を講じる。
基準を損なうことなくコストを管理し、粗利益率やその他の部門目標、財務目標を改善すること
チームメンバーがメニュー、特別プロモーション、行事、イベントに関する最新の知識を持つようにする。
ホテルの全エリアにおいて良好なコミュニケーションと人間関係を維持する。
ビジネス需要に見合った人員レベルを維持すること
毎月のコミュニケーションミーティングの実施と議事録の作成
会社の方針と手順に従い、スタッフの業績に関する問題を管理する
キッチンチームの採用、管理、トレーニング、育成
ホテルのセキュリティ、防火規制、安全衛生、食品安全に関する法令を遵守する。
メンテナンス、衛生、危険に関する問題がタイムリーに対処されるようにする
部門の財務実績を管理し、すべての計画がホテルの目標に沿ったものであること
食品管理システムが遵守されていることを確認し、利益率が目標に達していることを確認する
フード&ビバレッジマネージャーと定期的に全メニューを見直し、市場トレンドに沿ったメニューを提供する。
