2026年夏開業のラグジュアリーホテル「箱根強羅 TEN」の料飲部門責任者として、ホテル内レストランの調理と運営を担います。

料飲部門の立ち上げから参画いただき、運用まで一貫して携われます

【具体的な仕事内容】

・ホテル内レストランの調理全般/提供クオリティ管理

・老舗日本料理店監修の基本メニューをもとにしたメニュー調整・開発

・食材の仕入れ、在庫・原価管理

・キッチンスタッフの育成、チームづくり、シフト管理

・サービス/フロントと連携した運営改善

・繁忙期オペレーションの設計・改善

【開業ホテル「箱根強羅 TEN」について】

箱根・強羅に2026年夏開業予定。全室客室露天風呂付き18室+一棟貸しのラグジュアリーホテルです。

明治から続く強羅の静養文化を現代に再解釈し「一呼吸おき、晴れやかな自分に回帰するホテル」をコンセプトにしています。

強羅の豊かな自然環境の中で、お客様の心身を整える宿泊体験を創出することを目指しています。

求めている人材


【料飲責任者・料理長の肩書き経験は不問です】

*ホテルまたはレストランでの調理経験

*メニュー調整・原価管理の実務経験

*スタッフ育成・シフト作成など、チーム運営の経験(規模不問)

*食品衛生管理者資格(入社後取得でも可)

*基本的なPC操作(発注・在庫管理、数値管理、メール等)

【歓迎条件】

・日本料理/フレンチの調理経験

・料理長・副料理長、または責任者に準ずる経験

・地元食材を活かしたメニュー開発の実績

・旅館・ホテル業界での勤務経験

・新規オープン/リニューアルの経験

・調理師免許

実働時間:1日あたり8時間

平均勤務日数:1ヶ月あたり20日 〜 22日

給与詳細


基本給:年俸 500万円 〜 700万円

固定残業代:なし

全員に一律で支払われるその他手当金額:あり

・管理監督者としての採用想定/深夜割増手当は別途支給

・決算賞与別途支給(年2回)
