仕事内容

当社の鮮魚・寿司加工スタッフとして、ホテルや結婚式、食堂へお届けする料理の製造業務全般をお任せします

<具体的には>

・握り寿司、巻寿司の製造

・料理の仕込み・製造(漬け魚、巻き芯の製造など)

・寿司弁当、焼魚弁当の製造

・魚を捌いたり、骨抜きの作業など(三枚おろし、スライス加工)

当社では、全国の漁港から仕入れた魚介を直接仕入れ独自のノウハウで素早く加工処理しています◎魚だけでなく醤油や酢、砂糖など調味料も厳選しており、風味豊かで美味しい料理にこだわっています。

◆機械ではできない、質重視の工程をお任せします◎

当社では大量生産と質の高さを両立するため、機械を導入しながら、人の手作業も大切にしています。例えば魚の三枚卸も大部分は機械で行いますが、最後の骨取りは手作業で行いますし、魚の塩締めは水分量などを見ながら行うため完全手作業です。「美味しい料理へのこだわり」と「たくさんの人へ料理を届ける」の両立ができる職場なので、質に妥協せず仕事をすることができますよ◎

<製造部では約30名が活躍中>

お総菜部門:正社員5名、アルバイト・パート15名

お寿司部門:正社員4名、アルバイト・パート10名

社員は30代から40代が活躍中アルバイトは20代後半以上の方が多数です◎

仕事の1日の流れとしては、5〜6時くらいに出勤後、切り身パックや漬けの作成、醤油漬け真空パックを作るという感じですね。大体16時には退社してるんですが、作業量によっては14時に終わることもあります当社の良いところは、上下関係があまりないところ。

飲食の仕事だけどザ・職人という雰囲気もなく、みんな気さくで分からないこともイチ

から丁寧に教えてくれるので、すごく働きやすくて居心地がいいなと思いますね

はじめまして、製造スタッフの柴田です

入社13年目の37歳、趣味は週に1回奥さんとおいしいものを食べに行くことたまに自分で料理を作ってふるまったりもしています(笑)

高校卒業から音響、照明の仕事や居酒屋でバイトしてて、23歳の時に入社しました今担当しているのはお弁当やオードブルで、たまにお寿司を握ったりもしています。

お弁当は、すき焼きや揚げ物を作ったり、魚を焼いたりというイメージですねお寿司に関しては、機械でシャリを作るので僕は出来上がったシャリとネタを合わせています。大体1トレイ60貫くらい作っていますね。生臭さは全くないので安心ですよ◎

この仕事のやりがいは、お客様からの良い評価をいただいた時営業さんから「好評だったよ」って聞いたり、自分達が携わったお弁当がメディアに載った時はモチベーションが上がりますね以前、老舗の料亭様とのコラボでお弁当をご依頼をいただいたことがあったんです。レシピの考案をしてサンプルを出して…試行錯誤して作り上げた商品が大きな百貨店に並んだときは、続けてきて良かったと心から思いましたね実際にお客様と接することはないのでストレスもないですし、仕事はコツコツ&モクモク進めるのでコミュニケーションがちょっと苦手という方も働きやすいと思いますよ◎
