仕事内容:

イクラバルは「ロシアンビストロ」。

先祖代々受け継がれてきた、他にはないレシピをベースに、煮込み料理・前菜を中心としたキッチン業務をお任せします。

当店の料理は、仕込みで完成度が決まるものがほとんど。

営業中は"盛り付け+温め直し"が中心で、調理ゴリゴリの現場ではありません(手順・型あり)。

主な業務

  • 仕込み(最重要):煮込み料理/前菜/ソース・マリネ等の仕込み全般
  • 盛り付け・提供準備(単品×盛り合わせの"組み立て"が多いです)
  • 温め直し・最終仕上げ
  • 揚げ物(冷凍×分数管理で提供)
  • その場調理は必要最小限(例:ステーキ、可能なら日替わりパスタ1〜2種)
  • 食材・在庫管理、衛生管理、清掃・片付け
  • メニュー改善/通販などの商品開発にも関われます

アピールポイント:

  • 用賀で8年。常連さんが多く、落ち着いた客層(オープンキッチン&カウンター中心)
  • ロシア料理未経験でもOK。レシピ・型・手順があります
  • "仕込みで勝負する"店なので、技術よりも丁寧さと段取りが活きます
  • 小さな店だからこそ、同じ仕事をこなすだけでなく、現場で起きるドラマも含めて学びが多い
  • 店舗展開を視野に、通販などの商品開発も進行中
  • 独立を考えている方にも、現場・企画・運営を近い距離で学べる環境
  • 勤務状況は面談の上でしっかり話し合い。無理な働き方はさせません

求める人材:

  • 飲食店のキッチン経験があり、基本の流れを理解している方(目安:2年以上)
  • 仕込みを丁寧に積み上げるのが好きな方
  • 少人数の現場で段取りを考え、落ち着いて動ける方
  • オープンキッチンのため、挨拶や短い会話・気配りができる方

勤務時間・曜日:

・毎週月曜日は基本定休日

・月曜日が祝日の場合は出勤となります

その際は火曜日・水曜日が連休となります

・上記とは別に、月に一度「月曜+火曜」の連休取得が可能

(取得時期は希望を考慮します)

・お盆休みあり

・年末年始休みあり

※無理な連勤にならないよう、シフトは相談しながら決めています。

※しっかり休みながら、長く働ける環境を大切にしています。

【勤務時間】

・基本の勤務時間は15:00〜24:00です

・予約状況や仕込み内容により、出勤時間が前後する場合があります

・営業状況によっては、早上がりになる日もあります

・深夜営業はなく、終電や生活リズムを大きく崩す働き方ではありません

※無理な残業にならないよう、営業状況を見ながら調整しています。

※体力やライフスタイルに配慮し、無理のない勤務を心がけています。

休暇・休日:

・毎週月曜日は基本的にお休みです

・月曜日が祝日の場合は出勤となりますが、

その週は火曜日・水曜日が連休になります

・上記とは別に、月に一度、月曜+火曜の連休取得が可能です

・お盆休みあり

・年末年始休みあり

無理な連勤にならないよう、

事前に相談しながらシフトを組んでいます。

しっかり休みながら、長く続けられる働き方を大切にしています。

プライベートの時間も大切にしながら、

無理なく働いてほしいと考えています。

・勤務地は東急田園都市線 用賀駅から徒歩3分の場所です

・駅から近く、雨の日でも通勤しやすい立地です

・周辺は落ち着いた住宅街で、夜も比較的静かな環境です

・ガヤガヤした繁華街ではなく、穏やかな客層が中心です

・常連のお客様が多く、安心して働ける雰囲気があります

・店舗はコンパクトで、キッチンから店内全体に目が届きます

・カウンター中心のつくりのため、キッチンとホールの距離が近く、お客様とのやり取りも自然に生まれます

・終電時間を考慮したシフト調整が可能です

・自転車通勤についてはご相談ください
