  • - Assist F&B, Stewarding, Purchasing, Engineering, Spa and Housekeeping teams for the identification of food safety and hygiene hazards and risks within the hotel operations.

  • - Identify and provide advice, where resources should be targeted to prioritize the highest risk matters.

  • - Take necessary action to secure compliance with food safety and hygiene legislation and to achieve the hotel's food safety objectives.

  • - Assist management to verify the maintenance of good hygiene practices and policies and procedures are being followed in the operation.

  • - Follow up and verify the corresponding follow-up actions taken by the team in accordance with the requirements and recommendations made by third-party audits and inspections by government health departments or enforcement authorities.

  • - Assist F&B management conducting investigation of any food safety related complaint, e.g. foodborne illness, food allergy, and foreign objects.

  • - Assist the hotel visits from the local enforcement authorities or other organization related to food safety, hygiene and pest control.

  • - Conduct regular hotel inspections, including F&B areas for structural or hygiene conditions, and issue report. Provide recommendation to follow-up any defect and non-compliance as necessary.

  • - Conduct the control and verification of the Food Safety Management System, including implementation and records.

  • - Attend LWC meetings as requested.

  • - Assist the Senior Hygiene Manager and hotel operation by controlling local health safety regulations and LWC guidelines.

  • - Follow direct order from Senior Hygiene Manager when requested and be flexible for it.

  • - Represent the Senior Hygiene Manager when this one is not in the property.

  • - Assist other Japanese properties FSMS program implementation and control.

    • E DUCATION :

  • College Education or equivalent
  • Hygiene Certification / HACCP Certification
  • 生管理者資格保持者 / HACCP資格保持
  • Food Safety Administration Certificate
  • 食品衛生管理資格保持者
  • Local relevant certifications (where applicable)
  • 勤務地にて同等の資格保持者

    1-2 years-experience required in the same position
