求人内容

• Coordinate and oversee daily operations across multiple kitchen sections.
• Ensure food quality, consistency, and timely preparation according to established recipes and standards.
• Adapt and develop recipes to meet operational requirements and guest preferences.
• Maintain proper storage, sanitation, and upkeep of food, equipment, and supplies.
• Monitor inventory levels and ensure adequate stock for smooth kitchen operations.
• Recommend menu enhancements, process improvements, and cost-saving initiatives to the Executive Chef or Executive Sous Chef.
• Support the maintenance and sanitation of all kitchen equipment and facilities.
• Manage stock control to minimize waste, losses, and breakage.
• Ensure strict compliance with Food & Beverage policies, hygiene, and food safety standards.

• 定められたレシピおよび基準に基づき、料理の品質・一貫性・提供スピードを確保する。
• 業務上の要件やお客様の嗜好に合わせてレシピの改良・開発を行う。
• 食材・機材・備品の適切な保管、衛生管理および整備を維持する。
• 在庫状況を把握し、円滑な厨房運営のために必要な食材・物品を確保する。
• エグゼクティブシェフまたは副料理長に対し、メニュー改善、業務効率化、コスト削減等の提案を行う。
• 厨房設備および機器の保守・衛生管理を支援する。
• 在庫管理を徹底し、廃棄・紛失・破損を最小限に抑える。
• ホテルのF&B(料飲)ポリシー、衛生基準および食品安全基準を遵守し、高い衛生水準を維持する。

資格

• Native-level Japanese proficiency in both written and spoken communication; English ability is an advantage but not required.
• Strong knowledge of Japanese food safety and hygiene laws, including regulations on food poisoning and allergy prevention.
• Familiarity with local and national food production standards and related regulatory requirements.
• Broad knowledge of international and Asian cuisines, with a focus on innovation and creativity.
• Proven leadership capabilities and excellent communication skills.
• Ability to plan, forecast, and manage operations effectively.
• 日本語での高いコミュニケーション能力(読み書き・会話ともに必須)※英語力はあれば尚可、必須ではありません。
• 食品衛生法、食中毒・アレルギー防止など、日本国内の食品安全および衛生に関する法令知識を有すること。
• 食品製造に関わる各種規制・基準に精通していること。
• 国際料理およびアジア料理に関する幅広い知識と、革新性・創造性をもって調理に取り組めること。
• 優れたリーダーシップおよびコミュニケーション能力を有すること。
• 計画性・予測力をもって業務を遂行できること。
